Soft, fluffy and naturally sweet — a simple balanced breakfast made from whole ingredients.
Ingredients (4 servings)
1 ripe banana
1 egg
½ cup oats
1 tsp matcha powder
1 tsp vanilla essence
1 tsp baking powder
1 tsp coconut oil (for cooking)
Serve with (optional upgrades):
• 50–100g Greek yogurt — protein boost
• Flax seeds — fibre boost
• Mixed berry chia compote — carbs & flavour
Method - Pancakes
Mash banana until smooth.
Whisk in egg and vanilla.
Stir/blend in oats, matcha and baking powder to form a thick batter.
Heat a pan with coconut oil on low–medium heat.
Cook small pancakes 2–3 min each side until golden.
Serve warm with yogurt, flax seeds and berry chia compote.
Tip: Cook on low heat — matcha turns bitter if overheated

1 cup mixed berries
1 tbsp chia seeds
Method - Mixed Berry Chia Compote
Add berries to a saucepan.
Simmer on low heat 4–6 minutes until berries soften.
Stir in chia seeds and let sit 5 minutes to thicken.
Serve warm or chilled.
