Matcha Banana Pancakes

Soft, fluffy and naturally sweet — a simple balanced breakfast made from whole ingredients.

Ingredients (4 servings)

  • 1 ripe banana

  • 1 egg

  • ½ cup oats

  • 1 tsp matcha powder

  • 1 tsp vanilla essence

  • 1 tsp baking powder

  • 1 tsp coconut oil (for cooking)

Serve with (optional upgrades):

• 50–100g Greek yogurt — protein boost

• Flax seeds — fibre boost

• Mixed berry chia compote — carbs & flavour

Method - Pancakes

  1. Mash banana until smooth.

  2. Whisk in egg and vanilla.

  3. Stir/blend in oats, matcha and baking powder to form a thick batter.

  4. Heat a pan with coconut oil on low–medium heat.

  5. Cook small pancakes 2–3 min each side until golden.

  6. Serve warm with yogurt, flax seeds and berry chia compote.

Tip: Cook on low heat — matcha turns bitter if overheated

Ingredients

  • 1 cup mixed berries

  • 1 tbsp chia seeds

Method - Mixed Berry Chia Compote

  1. Add berries to a saucepan.

  2. Simmer on low heat 4–6 minutes until berries soften.

  3. Stir in chia seeds and let sit 5 minutes to thicken.

  4. Serve warm or chilled.


Tip: Cook on low heat — matcha turns bitter if overheated
